Homemade "Knöpfle"

Have you already tried the typical wild garlic pasta from Baden? No? Just try it - it's easier to make than you think ... You will need:
  • 100g flour
  • 4 eggs
  • a pinch of salt
  • a bunch of wild garlic
Preparation: put the flour and chopped wild garlic into a bowl. Make a well and add the egg. Beat the mixture by hand or use a food processor until it is completely smooth. Then let the dough rest for half an hour.

Pour the mixture into a large sieve and let it drip through into boiling salted water - if the mixture doesn’t flow quickly enough, press it through. The "Knöpfle" are done when they rise to the surface.
